Need Potato Salad Help for My Dad’s 70th

I'm in need of some potato salad ideas for my dad's 70th birthday party. He's serving burgers, and I want a side that goes well but I'm stuck on a good recipe. I don't usually make it, so any favorite recipes or twists you think would make it stand out would be awesome. Also, any tips on keeping mayo-based salads cold at an outdoor party would be great, too. Trying not to overthink it, but I'm tempted to just grab some store-bought. Thanks for any help!

If you have an Amish Market near you I suggest going there to purchase some. My Mother-in-law makes good potato salad, but when you ask her for any recipes the answer is always, "I don't know, I just make it."
A chef once told me that any mayo-based salad is fine just sitting out for the length of an outdoor party. I have never been comfortable with that, so we usually put the container in a larger pan or dish (a lot of stores sell inflatable ice holders) filled with ice.
